This is an interesting swap, however, I doubt anyone outside VW and perhaps a 3rd party battery upgrader (the name escapes me now, sorry) has the expertise necessary to answer your questions. Have you had a chance to connect with someone in VW engineering?
Sadly, no. The e-Golf's Android Auto implementation is wired-only. Same for Apple Car Play. It's in the manual. Same even on 2017 with the Technology Package (Canadian package with 9.2" head unit, may be sold differently in other markets).
If this ever happened on my 2017 I would be very, very, very pissed. To have this happen on any vehicle and to have to mess with pins and locksmith-style tools to disconnect the EVSE cable is just ridiculous. This should be one of those things in the car that just works smoothly, 100% of the time.
Clearly the issue with the OP's vehicle is serious and unacceptable. However, let's be clear, it's not widespread. There is zero evidence it's more common for e-Golfs to suddenly die than it is for an average ICE vehicle. I would not worry at all.
Is there a way to get these metrics for when the car is charging from the e-Golf itself? As you know the car only shows time remaining and SOC. I am looking for the volts and amps display, similar to that on a Tesla.

The OP is being quite clear that he cannot unlock and get the handle out even if the lights are off. Assuming that's accurate it's a malfunction in the vehicle or EVSE.

#1 is another reason to avoid 100% charges unless the full range is required for a road trip. It's explained in detail in the manual. Another reason is battery health. Charge to 70-80% on an ongoing basis.
I have an identical issue with mine. My guess is that OTA updates are not supported in Canada. The corresponding section in the manual is quite confusing. Let us know if you ever figure this out.
